"THE" enchiladasWe had our first birthday party at our house on Wednesday. Our home is such a work in progress that we haven't been able to have anyone over. Now that the weather is nice, we set up a couple tables out under the deck for shade and chairs EVERYWHERE. We had 24 people here to celebrate. It was fun...a little Chris Ledoux playin' smores for the kids, and most importantly...ENCHILADAS. Tom has had these ever since he can remember. It takes his mom all day to make them. My mom made some pico de gallo, Sixta made some hot salsa, and we had a taco bar to fill in for those that can't take the heat! Finished off with lemon cake, angel food cake, strawberries, rice crispy treats, italian sodas....UGH! We were stuffed!!!!
